Chipotle Chicken Recipe


Ingredients:

  • 1 oz dried chipotle chile pepper
  • 1 oz dried ancho chile pepper
  • ½ cup water
  • 1 small red onion, cut into chunks
  • 4 cloves garlic
  • 2 tsp sea salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 2 tbsp olive oil
  • 2 ½ lbs boneless, skinless chicken thighs

Instructions:

  1. Rehydrate Peppers: Soak chipotle and ancho chiles in water for 10-12 hours. Drain, remove seeds, and slice open.
  2. Make Marinade: Blend chiles, onion, garlic, salt, cumin, oregano, and black pepper into a coarse paste. Add olive oil and blend until smooth.
  3. Marinate Chicken: Pound chicken thighs to ½-inch thick. Coat with marinade and refrigerate for at least 8 hours.
  4. Grill: Preheat grill to medium-high. Cook chicken until no longer pink and internal temperature reaches 165°F (75°C), about 5-10 minutes per side.
  5. Rest & Serve: Let chicken rest for 5 minutes, then slice and enjoy!
