Honey Garlic Chicken Fried Rice

 

Chicken Fried Rice

Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 1 lb chicken breast, cubed
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots, thawed
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon minced fresh ginger
  • Salt and pepper to taste
  • 2 tablespoons green onions, chopped for garnish
  • Sesame seeds, for garnish (optional)

Directions:

  1. Cook the Chicken:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the cubed chicken breast and season with salt and pepper.
    • Cook the chicken for about 5-7 minutes, or until it is golden and cooked through.
    • Remove the chicken from the skillet and set it aside.
  2. Sauté Vegetables:

    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the finely chopped onion and sauté until translucent, about 2-3 minutes.
    • Add the minced garlic and minced fresh ginger, cooking for an additional minute until fragrant.
  3. Stir-Fry Rice and Veggies:

    • Increase the heat to high.
    • Add the cooked rice, thawed peas, and carrots to the skillet.
    • Stir-fry the mixture for a couple of minutes, allowing the vegetables to soften slightly and the rice to heat through.
  4. Scramble Eggs:

    • Push the rice mixture to one side of the skillet.
    • Pour the lightly beaten eggs onto the empty side of the skillet.
    • Scramble the eggs until they are just set, then mix them into the rice and vegetables.
  5. Combine Ingredients:

    • Return the cooked chicken to the skillet.
    • Drizzle the soy sauce and honey over the mixture.
    • Stir everything together and cook for an additional 2-3 minutes to ensure that everything is well combined and heated through.
  6. Season and Garnish:

    • Taste and adjust the seasoning with additional salt and pepper if needed.
    • Garnish with chopped green onions and, if desired, sesame seeds.
  7. Serve:

    • Serve the Chicken Fried Rice hot and enjoy!

Tips:

  • Rice: Using day-old rice is ideal because it’s drier and less likely to become mushy when stir-fried. If using fresh rice, let it cool and dry out a bit before using.
  • Veggies: You can customize the vegetables according to your preference or what you have on hand.
