Chicken Fried Rice
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1 lb chicken breast, cubed
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 teaspoon minced fresh ginger
- Salt and pepper to taste
- 2 tablespoons green onions, chopped for garnish
- Sesame seeds, for garnish (optional)
Directions:
Cook the Chicken:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed chicken breast and season with salt and pepper.
- Cook the chicken for about 5-7 minutes, or until it is golden and cooked through.
- Remove the chicken from the skillet and set it aside.
Sauté Vegetables:
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the finely chopped onion and sauté until translucent, about 2-3 minutes.
- Add the minced garlic and minced fresh ginger, cooking for an additional minute until fragrant.
Stir-Fry Rice and Veggies:
- Increase the heat to high.
- Add the cooked rice, thawed peas, and carrots to the skillet.
- Stir-fry the mixture for a couple of minutes, allowing the vegetables to soften slightly and the rice to heat through.
Scramble Eggs:
- Push the rice mixture to one side of the skillet.
- Pour the lightly beaten eggs onto the empty side of the skillet.
- Scramble the eggs until they are just set, then mix them into the rice and vegetables.
Combine Ingredients:
- Return the cooked chicken to the skillet.
- Drizzle the soy sauce and honey over the mixture.
- Stir everything together and cook for an additional 2-3 minutes to ensure that everything is well combined and heated through.
Season and Garnish:
- Taste and adjust the seasoning with additional salt and pepper if needed.
- Garnish with chopped green onions and, if desired, sesame seeds.
Serve:
- Serve the Chicken Fried Rice hot and enjoy!
Tips:
- Rice: Using day-old rice is ideal because it’s drier and less likely to become mushy when stir-fried. If using fresh rice, let it cool and dry out a bit before using.
- Veggies: You can customize the vegetables according to your preference or what you have on hand.
