Korean Beef Bowls


Ingredients:

  • Ground Beef Mixture:

    • 1 lb. ground beef
    • Salt/pepper
    • 3 cloves garlic, minced
    • 1 small yellow onion, finely diced
  • Sauce:

    • 1 cup beef broth
    • 2 tbsp cornstarch
    • 1/4 cup soy sauce
    • 2 tbsp packed brown sugar
    • 2 tbsp honey
    • 1 tbsp rice vinegar
    • 1 tsp hot sauce
    • 1/2 tsp sesame oil
    • 1/2 tsp ground ginger
  • Garnishes:

    • Green onions
    • Toasted sesame seeds
    • Red pepper flakes
  • For Serving:

    • Thinly sliced cucumbers
    • Julienned carrots
    • 3 cups cooked rice

Instructions:

  1. Prepare the Sauce:

    • Combine beef broth with cornstarch until well mixed.
    • Ensure the broth is cool to prevent activating the cornstarch prematurely.
    • Mix in soy sauce, brown sugar, honey, rice vinegar, hot sauce, sesame oil, and ground ginger. Store in a cool place.
  2. Cook the Beef:

    • Season ground beef with salt and pepper.
    • Heat a large skillet over medium-high heat and add the ground beef. Cook and crumble for 3 minutes.
    • Add onions and garlic. Sauté until beef is cooked through (5-6 minutes). Drain any grease.
  3. Combine and Thicken:

    • Add the prepared sauce to the skillet. Bring to a boil, then let it continue to boil, thicken, and reduce for 3 minutes, stirring periodically.
  4. Garnish and Serve:

    • Remove from heat. Garnish with green onions, toasted sesame seeds, and red pepper flakes.
    • Serve over rice, cauliflower rice, or in lettuce wraps.
