Crispy Chicken Tikka Bowls with Mint Sauce

Ingredients:

  • 4 pieces crispy breaded chicken (homemade or store-bought)
  • 1/2 cup tikka masala sauce (homemade or store-bought)
  • 3 cups cooked quinoa
  • 1 cucumber, sliced or diced
  • Pickled red onion
  • For the slaw:
    • 2 cups shredded coleslaw
    • 3 tablespoons mayonnaise
    • 2 tablespoons vinegar
    • 3/4 teaspoon salt
    • 1 teaspoon honey
  • For the mint sauce:
    • 1/4 cup mint leaves
    • 1/4 cup cilantro leaves
    • 1/2 cup mayonnaise or plain Greek yogurt
    • 1/2 teaspoon salt
    • Juice of 1 lime
    • 1 clove garlic
    • 1 jalapeño, seeded and chopped
    • Water to thin the sauce as needed

Instructions:

  1. Cook chicken: Cook the chicken according to package directions. Brush with tikka masala sauce and return to oven for an additional 5 minutes.
  2. Prepare slaw: In a bowl, combine coleslaw, mayonnaise, vinegar, salt, and honey. Toss to coat.
  3. Make mint sauce: In a blender or food processor, combine mint leaves, cilantro leaves, mayonnaise, salt, lime juice, garlic, jalapeño, and water. Blend or pulse until smooth. Adjust consistency with more water if needed.
  4. Assemble bowls: Serve bowls with quinoa, slaw, cucumber, pickled red onion, and mint sauce.

Optional additions:

  • For extra crunch: Add toasted almonds or sesame seeds to the slaw.
  • For a tangy kick: Add a tablespoon of lemon juice to the mint sauce.
  • For a smoky flavor: Add a teaspoon of smoked paprika to the tikka masala sauce.
  • For a spicy kick: Add additional jalapeño or red pepper flakes to the mint sauce.
