Ingredients:
- 4 pieces crispy breaded chicken (homemade or store-bought)
- 1/2 cup tikka masala sauce (homemade or store-bought)
- 3 cups cooked quinoa
- 1 cucumber, sliced or diced
- Pickled red onion
- For the slaw:
- 2 cups shredded coleslaw
- 3 tablespoons mayonnaise
- 2 tablespoons vinegar
- 3/4 teaspoon salt
- 1 teaspoon honey
- For the mint sauce:
- 1/4 cup mint leaves
- 1/4 cup cilantro leaves
- 1/2 cup mayonnaise or plain Greek yogurt
- 1/2 teaspoon salt
- Juice of 1 lime
- 1 clove garlic
- 1 jalapeño, seeded and chopped
- Water to thin the sauce as needed
Instructions:
- Cook chicken: Cook the chicken according to package directions. Brush with tikka masala sauce and return to oven for an additional 5 minutes.
- Prepare slaw: In a bowl, combine coleslaw, mayonnaise, vinegar, salt, and honey. Toss to coat.
- Make mint sauce: In a blender or food processor, combine mint leaves, cilantro leaves, mayonnaise, salt, lime juice, garlic, jalapeño, and water. Blend or pulse until smooth. Adjust consistency with more water if needed.
- Assemble bowls: Serve bowls with quinoa, slaw, cucumber, pickled red onion, and mint sauce.
Optional additions:
- For extra crunch: Add toasted almonds or sesame seeds to the slaw.
- For a tangy kick: Add a tablespoon of lemon juice to the mint sauce.
- For a smoky flavor: Add a teaspoon of smoked paprika to the tikka masala sauce.
