Easy Bubble and Squeak Recipe


Ingredients:

Bubble and Squeak:

  • 700g (3 cups) leftover mashed potato
  • 200g (3 cups) leftover chopped cooked cabbage
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil

To Serve:

  • Grilled crispy bacon, chopped
  • Salt and pepper
  • Poached eggs
  • Fresh parsley, chopped
  • Brown sauce (optional)

Instructions:

  1. Preheat the grill.
  2. In a bowl, mix mashed potato, cabbage, salt, and pepper.
  3. Heat butter and oil in frying pans over medium-high heat.
  4. Add half of the bubble and squeak mixture to each pan and squash down.
  5. Fry for 5-7 minutes until edges brown. Ruffle the top with a fork.
  6. Brush with remaining butter and oil mixture.
  7. Grill for 4-5 minutes until golden brown.
  8. Remove from oven and sprinkle with bacon, salt, pepper, poached eggs, and parsley.
  9. Serve with brown sauce if desired.

Tips:

  • For a crispier texture, use a cast iron skillet.
  • You can adjust the amount of ingredients based on your desired portion size.
  • Experiment with different leftover vegetables to add variety to your bubble and squeak.
