Ingredients:
Bubble and Squeak:
- 700g (3 cups) leftover mashed potato
- 200g (3 cups) leftover chopped cooked cabbage
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 2 tablespoons vegetable oil
To Serve:
- Grilled crispy bacon, chopped
- Salt and pepper
- Poached eggs
- Fresh parsley, chopped
- Brown sauce (optional)
Instructions:
- Preheat the grill.
- In a bowl, mix mashed potato, cabbage, salt, and pepper.
- Heat butter and oil in frying pans over medium-high heat.
- Add half of the bubble and squeak mixture to each pan and squash down.
- Fry for 5-7 minutes until edges brown. Ruffle the top with a fork.
- Brush with remaining butter and oil mixture.
- Grill for 4-5 minutes until golden brown.
- Remove from oven and sprinkle with bacon, salt, pepper, poached eggs, and parsley.
- Serve with brown sauce if desired.
Tips:
- For a crispier texture, use a cast iron skillet.
- You can adjust the amount of ingredients based on your desired portion size.
