Jumbo Banana Chocolate Chip Muffins


Ingredients:

  • 2 cups all-purpose flour
  • 1 cup cake flour
  • 1 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup melted butter
  • 1 cup buttermilk
  • 2 eggs
  • 3 very ripe bananas, mashed
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips or chunks

Instructions:

  1. Preheat oven to 425°F. Spray or line a jumbo muffin tin.
  2. In a large mixing bowl, combine sugar, vegetable oil, melted butter, eggs, and vanilla. Add mashed bananas and mix just until combined.
  3. In a medium mixing bowl, whisk together flours, baking powder, and salt. Alternate adding dry ingredients and buttermilk to the banana mixture. Fold in chocolate chips or chunks.
  4. Scoop batter into prepared muffin tin, filling each well 1/4" from the top.
  5. Bake at 425°F for 5 minutes, then reduce heat to 375°F and bake for 25 more minutes.
  6. Let muffins cool in the tins for 15 minutes before transferring to a wire rack to cool completely.
