Ingredients:
- 2 cups all-purpose flour
- 1 cup cake flour
- 1 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup melted butter
- 1 cup buttermilk
- 2 eggs
- 3 very ripe bananas, mashed
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup chocolate chips or chunks
Instructions:
- Preheat oven to 425°F. Spray or line a jumbo muffin tin.
- In a large mixing bowl, combine sugar, vegetable oil, melted butter, eggs, and vanilla. Add mashed bananas and mix just until combined.
- In a medium mixing bowl, whisk together flours, baking powder, and salt. Alternate adding dry ingredients and buttermilk to the banana mixture. Fold in chocolate chips or chunks.
- Scoop batter into prepared muffin tin, filling each well 1/4" from the top.
- Bake at 425°F for 5 minutes, then reduce heat to 375°F and bake for 25 more minutes.
- Let muffins cool in the tins for 15 minutes before transferring to a wire rack to cool completely.
