Bacon and Egg Croissant Boat


Ingredients:

  • Croissants: 4 croissants
  • Bacon: 5 slices Wellshire Farms Bourbon Maple Bacon
  • Olive oil: 1 tablespoon
  • Eggs: 6 eggs
  • Spinach: 1 cup chopped fresh spinach
  • Cheddar cheese: 1/3 cup shredded sharp cheddar cheese
  • Seasonings: 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon paprika
  • Cheddar Chive Gravy: 1 cup shredded sharp cheddar cheese, 1 cup milk, 8 ounces chicken broth, 1/4 cup yellow onion, 1/8 cup chopped fresh chives, 2 cloves garlic, 2 tablespoons organic all-purpose flour

Instructions:

  1. Cook bacon: Cook bacon in a frying pan until crispy. Set aside.
  2. Make gravy: In the same pan, sauté onion and garlic. Add flour and cook for 2 minutes. Whisk in milk and chicken broth. Add cheese and chives.
  3. Prepare croissants: Hollow out croissants and spray with olive oil. Bake for 5 minutes.
  4. Scramble eggs: Scramble eggs with spinach, cheese, and bacon.
  5. Assemble: Fill croissants with egg mixture. Top with more cheese. Bake for 10 minutes.
  6. Serve: Serve with cheddar chive gravy.
