Tamarind Spiced Roasted Potatoes

Ingredients:

  • 1 kg potatoes, peeled and chopped
  • 2 teaspoons ground turmeric
  • 3 tablespoons salt
  • 150g ghee
  • 2 tablespoons plain flour
  • 2 tablespoons semolina
  • 1 teaspoon baking powder
  • 3 onions, quartered
  • 1 bulb garlic, cloves peeled and whole
  • 260g tamarind sauce
  • Large handful of fresh coriander, chopped

Instructions:

  1. Peel potatoes and chop into 5cm chunks.
  2. Boil potatoes in water with turmeric and salt for 2 minutes. Drain.
  3. Preheat oven to 180°C. Heat ghee in a roasting dish.
  4. Mix flour, semolina, and baking powder. Toss potatoes in the mixture.
  5. Add potatoes to the hot roasting dish. Season and toss in ghee.
  6. Add onions and garlic. Roast for 50 minutes, turning potatoes halfway through.
  7. Drizzle with tamarind sauce and roast for 10 more minutes.
  8. Sprinkle with coriander and serve.

Tips:

  • Save potato peelings to make soup.
  • Adjust the amount of tamarind sauce to your desired level of tanginess.
  • Serve with your favorite protein or as a vegetarian main.
