Turkey Mince Fried Rice


Ingredients:

  • 500 g / 1 lb turkey breast mince
  • 500 g / 2 cups cooked brown rice (or 2 microwave pouches)
  • 2 large eggs, beaten
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 100 g / ¾ cup frozen peas
  • 2 spring onions (scallions), finely sliced (plus extra for garnish)
  • Optional garnishes: fresh coriander, extra spring onions, sliced red chilies

Instructions:

  1. Heat a wok or large non-stick frying pan over high heat. Stir-fry the turkey mince for about 4 minutes until browned.
  2. Add the cooked rice and stir-fry for 2 more minutes to combine.
  3. Make a well in the middle of the pan and pour in the beaten eggs. Let the eggs cook for 45 seconds before stirring them into the turkey and rice mixture.
  4. Add the frozen peas and stir-fry for 2 minutes, allowing the peas to cook and create crispy bits in the pan.
  5. Stir in the soy sauce, sesame oil, and sliced spring onions. Turn off the heat.
  6. Serve immediately, garnished with coriander, extra spring onions, and/or sliced red chilies as desired.

Notes:

  • To speed up the process, use microwave pouches of wholegrain rice. For regular rice, use approximately 167g of uncooked brown or white rice. Cook according to the packet, then cool it under cold water and drain well.
  • Pro Tip: Massage the microwave rice pouch before opening to ensure the rice separates easily.
