Ingredients:
For the chicken:
- 2 pounds organic chicken breasts
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
For the Tuscan seasonings:
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 2 teaspoons dried parsley
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried rosemary
For the sauce:
- 4 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 4 garlic cloves, minced
- 1 1/2 cups organic heavy cream
- 1 cup organic chicken stock
- 3 tablespoons white cooking wine
- 4 tablespoons freshly-squeezed lemon juice
- 1 cup freshly-grated Parmesan cheese
- 1 teaspoon lemon zest
- 1 cup chopped kale
- 1/2 lemon, sliced thin (skin on)
Instructions:
- Season chicken: In a large bowl, combine chicken, salt, pepper, oregano, smoked paprika, and thyme. Let sit for 5-10 minutes.
- Cook chicken: In a large skillet over medium-high heat, melt butter and sauté garlic until fragrant. Add seasoned chicken and cook until seared on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
- Make sauce: In the same skillet, add olive oil and Tuscan seasonings. Cook for 1-2 minutes. Reduce heat to medium-low and add heavy cream, chicken stock, lemon juice, lemon zest, and white wine. Simmer for 1-2 minutes, or until thickened. Stir in Parmesan cheese.
- Combine chicken and sauce: Add chopped kale and lemon slices to the sauce. Return chicken to the skillet and simmer for 15-20 minutes, or until chicken is cooked through.
- Serve: Serve with your favorite side dishes. Garnish with Parmesan cheese, if desired.
