Creamy Lemon Herb Parmesan Chicken


Ingredients:

For the chicken:

  • 2 pounds organic chicken breasts
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

For the Tuscan seasonings:

  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 teaspoons dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried rosemary

For the sauce:

  • 4 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 1/2 cups organic heavy cream
  • 1 cup organic chicken stock
  • 3 tablespoons white cooking wine
  • 4 tablespoons freshly-squeezed lemon juice
  • 1 cup freshly-grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 cup chopped kale
  • 1/2 lemon, sliced thin (skin on)

Instructions:

  1. Season chicken: In a large bowl, combine chicken, salt, pepper, oregano, smoked paprika, and thyme. Let sit for 5-10 minutes.
  2. Cook chicken: In a large skillet over medium-high heat, melt butter and sauté garlic until fragrant. Add seasoned chicken and cook until seared on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
  3. Make sauce: In the same skillet, add olive oil and Tuscan seasonings. Cook for 1-2 minutes. Reduce heat to medium-low and add heavy cream, chicken stock, lemon juice, lemon zest, and white wine. Simmer for 1-2 minutes, or until thickened. Stir in Parmesan cheese.
  4. Combine chicken and sauce: Add chopped kale and lemon slices to the sauce. Return chicken to the skillet and simmer for 15-20 minutes, or until chicken is cooked through.
  5. Serve: Serve with your favorite side dishes. Garnish with Parmesan cheese, if desired.

Optional additions:

  • For extra flavor: Add a pinch of red pepper flakes or cayenne pepper to the seasoning mix.
  • For a richer sauce: Use a combination of heavy cream and half-and-half.
  • For a tangier flavor: Add more lemon juice or zest.
  • For additional vegetables: Add mushrooms, spinach, or roasted vegetables to the dish.
