Greek Steak Pitas with Caramelized Onions and Mushrooms


Ingredients:

For the marinade:
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons nonfat plain Greek yogurt
  • 1 teaspoon Cavender's All Purpose Greek Seasoning
  • 1/2 teaspoon dried oregano
  • Salt and pepper
  • 1 1/4 pounds chicken breast tenderloin, cut in half
For the tzatziki sauce:
  • 1 cup nonfat plain Greek yogurt
  • 1/4 cup minced fresh parsley or 1 tablespoon dried parsley
  • 2 cloves garlic, minced
  • 1 small cucumber, peeled, seeded, and finely chopped or shredded
  • Salt and pepper
  • 1 tablespoon lemon juice (optional)
  • 1/4 cup crumbled feta cheese (optional)
Additional toppings (optional):
  • Sliced tomatoes
  • Chopped red onion
  • Hummus

Instructions:

  1. Make marinade: In a bowl, combine garlic, lemon juice, olive oil, Greek yogurt, Cavender's seasoning, oregano, salt, and pepper.
  2. Marinate chicken: Add chicken to marinade and marinate for at least 30 minutes (or up to 4 hours).
  3. Make tzatziki sauce: In a separate bowl, combine Greek yogurt, parsley, garlic, cucumber, salt, and pepper. Stir in lemon juice and crumbled feta cheese (if using). Chill until ready to serve.
  4. Grill chicken: Grill chicken until cooked through and slightly charred.
  5. Assemble: Serve grilled chicken on pita bread or lettuce wraps with tzatziki sauce and your choice of toppings.

Optional additions:

  • For extra flavor: Add a pinch of red pepper flakes or cayenne pepper to the marinade or tzatziki sauce.
  • For a smoky flavor: Grill the chicken over indirect heat for a few minutes after grilling directly.
  • For a tangy kick: Add a tablespoon of lemon juice or orange zest to the marinade or tzatziki sauce.
  • For additional vegetables: Add sliced tomatoes, chopped red onion, or hummus to the wraps.
