- 1 1/4 pounds chicken breast tenderloin, cut in half
- 1 cup nonfat plain Greek yogurt
- 1/4 cup minced fresh parsley or 1 tablespoon dried parsley
- 2 cloves garlic, minced
- 1 small cucumber, peeled, seeded, and finely chopped or shredded
- Salt and pepper
- 1 tablespoon lemon juice (optional)
- 1/4 cup crumbled feta cheese (optional)
- Sliced tomatoes
- Chopped red onion
- Hummus
Instructions:
- Make marinade: In a bowl, combine garlic, lemon juice, olive oil, Greek yogurt, Cavender's seasoning, oregano, salt, and pepper.
- Marinate chicken: Add chicken to marinade and marinate for at least 30 minutes (or up to 4 hours).
- Make tzatziki sauce: In a separate bowl, combine Greek yogurt, parsley, garlic, cucumber, salt, and pepper. Stir in lemon juice and crumbled feta cheese (if using). Chill until ready to serve.
