TRIPLE CHOCOLATE PUMPKIN BREAD


Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs  
  • 1 cup pumpkin puree
  • 1/2 cup milk chocolate chips
  • 1/4 cup milk
For the topping:
  • 2 tablespoons heavy cream
  • 1/2 tablespoon butter
  • 3 tablespoons chocolate chips
  • 1/4 teaspoon pumpkin pie spice (optional)

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Combine dry ingredients: In a large bowl, whisk together flour, cocoa powder, baking soda, and baking powder.
  3. Cream butter and sugars: Cream together butter and sugars until light and fluffy.
  4. Add wet ingredients: Beat in eggs, pumpkin, and milk.
  5. Combine wet and dry ingredients: Gradually add dry ingredients to wet ingredients, mixing just until combined. Fold in chocolate chips.
  6. Bake: Pour batter into prepared pan. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Make topping: While bread is baking, heat heavy cream and butter in the microwave until just simmering. Remove from heat, add chocolate chips, and let sit for 2-3 minutes. Whisk together.
  8. Drizzle topping: Drizzle chocolate topping over cooled bread. Sprinkle with pumpkin pie spice (optional).

  • For extra flavor: Add a pinch of cinnamon or ginger to the batter.
  • For a richer flavor: Use dark chocolate chips and cocoa powder.
  • For a crunchier texture: Add chopped walnuts or pecans to the batter.
  • For a sweeter topping: Increase the amount of brown sugar in the topping.
