Ingredients:
- 300 grams dark chocolate (at least 65% cacao), chopped
- 80 milliliters heavy cream
- 60 milliliters Guinness Imperial Gingerbread Spiced Stout
- Cocoa powder for dusting
- Gold leaf for accenting
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
Instructions:
- Prepare pan: Spray a small 6x3-inch loaf pan with non-stick spray and line with parchment paper.
- Melt chocolate: Place chopped chocolate in a bowl. In a small saucepan, bring cream to a boil. Pour cream over chocolate and let sit for 2 minutes. Stir to combine.
- Temper chocolate: Place chocolate bowl over a simmering water bath, making sure the bottom of the bowl does not touch the water. Stir continuously until smooth and homogenous. Remove from heat.
- Add flavorings: Stir in Guinness Imperial Gingerbread Spiced Stout and any optional additions.
- Pour into pan: Scrape mixture into prepared pan and smooth the top. Refrigerate for 2-3 hours, or until firm.
- Cut and serve: Using the parchment sides, lift the truffle out of the pan. Cut into 1-inch pieces. Dust with cocoa powder and accent with gold leaf (optional).
Optional additions:
- For extra flavor: Add vanilla extract, ground ginger, or ground cinnamon to the chocolate mixture.
- For a richer texture: Use a higher percentage cacao dark chocolate.
- For a different flavor: Experiment with different types of stout or porter beer.
