Shepherd's Pie Recipe


Ingredients:

For the filling:

  • 1 package Reames Frozen Egg Noodles
  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup sliced leeks
  • 1/2 cup diced yellow onions
  • 1/4 cup diced shallots
  • 6 sprigs parsley, stems included, chopped
  • 1 teaspoon thyme, chopped
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 cups turkey stock (or chicken stock)
  • 1 cup milk
  • 2 cups shredded turkey
For the biscuits:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 cup cold unsalted butter, diced
  • 3/4 cup buttermilk
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped chives
For the egg wash:
  • 1 large egg, beaten

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C).
  2. Cook noodles: Cook Reames Egg Noodles al dente according to package directions. Drain and set aside.
  3. Make filling: In a large oven-proof skillet, heat olive oil over medium-high heat. Add carrots, celery, leeks, onions, and shallots. Cook until softened, 5-7 minutes.
  4. Add herbs and spices: Stir in parsley, thyme, flour, onion powder, garlic powder, salt, and pepper. Cook for 2 minutes.
  5. Make sauce: Add turkey stock and milk. Bring to a simmer and cook until thickened, 3-5 minutes.
  6. Combine filling ingredients: Remove pan from heat and stir in turkey and cooked noodles.
  7. Make biscuits: In a stand mixer bowl, whisk together flour, baking powder, salt, and pepper. Cut in butter until pea-sized. Add buttermilk and cheese. Beat on low until just combined.
  8. Shape biscuits: Turn dough out onto a floured surface and roll to 3/8-inch thickness. Stamp out twelve 2.5-inch rounds.
  9. Assemble shepherd's pie: Place biscuits on top of filling. Brush with egg wash.
  10. Bake: Bake for 20-30 minutes, or until biscuits are golden brown and filling is bubbly.

Optional additions:

  • For extra flavor: Add a pinch of nutmeg or allspice to the filling.
  • For a richer flavor: Use heavy cream instead of milk.
  • For a spicier flavor: Add a pinch of cayenne pepper or red pepper flakes to the filling.
  • For additional vegetables: Add diced mushrooms or peas to the filling.
