- 1 package Reames Frozen Egg Noodles
- 2 tablespoons olive oil
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup sliced leeks
- 1/2 cup diced yellow onions
- 1/4 cup diced shallots
- 6 sprigs parsley, stems included, chopped
- 1 teaspoon thyme, chopped
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 cups turkey stock (or chicken stock)
- 1 cup milk
- 2 cups shredded turkey
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup cold unsalted butter, diced
- 3/4 cup buttermilk
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped chives
- 1 large egg, beaten
Instructions:
- Preheat oven: Preheat oven to 350°F (175°C).
- Cook noodles: Cook Reames Egg Noodles al dente according to package directions. Drain and set aside.
- Make filling: In a large oven-proof skillet, heat olive oil over medium-high heat. Add carrots, celery, leeks, onions, and shallots. Cook until softened, 5-7 minutes.
- Add herbs and spices: Stir in parsley, thyme, flour, onion powder, garlic powder, salt, and pepper. Cook for 2 minutes.
- Make sauce: Add turkey stock and milk. Bring to a simmer and cook until thickened, 3-5 minutes.
- Combine filling ingredients: Remove pan from heat and stir in turkey and cooked noodles.
- Make biscuits: In a stand mixer bowl, whisk together flour, baking powder, salt, and pepper. Cut in butter until pea-sized. Add buttermilk and cheese. Beat on low until just combined.
- Shape biscuits: Turn dough out onto a floured surface and roll to 3/8-inch thickness. Stamp out twelve 2.5-inch rounds.
- Assemble shepherd's pie: Place biscuits on top of filling. Brush with egg wash.
- Bake: Bake for 20-30 minutes, or until biscuits are golden brown and filling is bubbly.
Optional additions:
- For extra flavor: Add a pinch of nutmeg or allspice to the filling.
- For a richer flavor: Use heavy cream instead of milk.
- For a spicier flavor: Add a pinch of cayenne pepper or red pepper flakes to the filling.
