Ingredients:
For the Bircher Muesli:
- 2 cups jumbo or steel-cut oats
- ¼ cup desiccated coconut
- ⅓ cup raisins (without vegetable oil coating)
- ¼ cup flaked almonds
- 1 cup coconut water
- 1¼ cups whole organic milk or nut milk (no additives)
- ½ cup organic natural yogurt
- ½ tsp cinnamon
- 2 small apples, grated
- 1 orange, zest & juice
For the Cooked Pears (Optional):
- 2 pears, peeled, cored, and cut into quarters
- 1 orange, juice only (can use zest in the muesli mixture)
- 2 tbsp water
- 1 vanilla pod (seeds scraped out)
- 2 tbsp coconut sugar
Instructions:
Prepare the Bircher Muesli:
- In a medium bowl, combine the oats, desiccated coconut, raisins, flaked almonds, coconut water, milk (or nut milk), yogurt, cinnamon, grated apples, and orange zest & juice.
- Mix thoroughly until all ingredients are well combined and hydrated.
- Cover the bowl and refrigerate overnight to allow the mixture to soak and flavors to meld.
Prepare the Cooked Pears (Optional):
- In a small pot, combine the pear quarters, orange juice, water, vanilla seeds, and coconut sugar.
- Heat on medium, covering with a lid to trap steam and cook the pears. Stir occasionally and add more water if needed to prevent drying out and to create a syrup.
- Cook for about 10 minutes or until the pears are tender to your liking.
- Allow the pears to cool before transferring them to the refrigerator.
Serve:
- In the morning, top your soaked Bircher muesli with your choice of additional fruity or nutty ingredients.
- If using, add the cooked pears and some of the syrup on top of the muesli.
- Enjoy immediately or store in the fridge for up to 4 days.
Dairy-Free Option:
- Replace the dairy milk and yogurt with coconut milk or additional coconut water. Avoid commercial nut milks and coconut yogurt with questionable additives.
