Ingredients
Meatless Patties:
- 1 package of your favorite meatless breakfast patties (e.g., Nature's Fynd, Beyond, etc.)
Vegetables:
- 2 tomatoes, halved
- 1 avocado, sliced
- 8 oz mushrooms, washed and chopped
- 2 slices sourdough bread
Baked Beans:
- 1 can beans, drained (save 2-3 tbsp bean water)
- ½ tablespoon apple cider vinegar
- ¼ cup ketchup
- Garlic powder, onion powder, salt & pepper to taste
Tofu Scramble:
- 1 block firm tofu (14 oz), drained and blotted
- 2 tablespoons tahini
- ¼ cup nutritional yeast
- ½ cup dairy-free milk
- ¼ teaspoon turmeric
- Salt & pepper to taste
Potato Hash Browns:
- 1 lb potatoes, diced
- Olive oil
- Garlic powder, onion powder, paprika, Italian seasoning, salt & pepper to taste
Instructions
Cook Patties: Heat olive oil in a pan over medium heat. Cook meatless patties for 2-3 minutes per side. Remove and set aside.
Sauté Mushrooms: Add more olive oil to the pan, then add chopped mushrooms. Season with garlic & onion powder, salt & pepper. Cook for 7-10 minutes, stirring regularly. Remove from pan.
Sear Tomatoes: In the same pan, add halved tomatoes and cook for 2-3 minutes on each side until softened. Remove from pan.
Toast Bread: Add oil and toast the slices of sourdough in the pan until golden brown. Remove.
Make Tofu Scramble: Tear tofu into medium pieces. Add turmeric, garlic & onion powder, nutritional yeast, tahini, and dairy-free milk. Cook for 7-10 minutes, adjusting seasoning as needed.
Fry Potatoes: Heat a generous amount of olive oil in a pan. Add diced potatoes, garlic & onion powder, paprika, Italian seasoning, and salt & pepper. Fry for 15-20 minutes until crispy, stirring frequently.
Prepare Baked Beans: In the same pan, add drained beans, saved bean water, apple cider vinegar, ketchup, and seasonings. Stir and cook until thickened, then remove from heat.
Assemble Plate: Serve all components on a plate, adding sliced avocado on top. Enjoy!
Notes
- Storage: Store leftovers in airtight containers in the fridge; reheat as needed.
- Uniform Potato Sizes: Cut potatoes into similar sizes for even cooking.
- Keep Warm: Place finished components in a warm oven to keep them warm while preparing the rest.
