Whole Roasted Chipotle Salsa Cauliflower



Ingredients:

  • 1 large cauliflower head, trimmed
  • 1 cup Greek yogurt
  • 1/4 cup What’s Gaby Cooking Chipotle Salsa
  • 3 tablespoons olive oil
  • Zest of 1 lime
  • 2 tablespoons lime juice
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ancho chili powder
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 cup finely grated cheddar cheese
Optional additions:
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped toasted almonds
  • 1 tablespoon honey

Instructions:

  1. Preheat oven: Preheat oven to 400°F (200°C). Lightly cover an oven-proof skillet or baking sheet with non-stick spray.
  2. Make marinade: In a large bowl, whisk together Greek yogurt, chipotle salsa, olive oil, lime zest, lime juice, garlic powder, onion powder, ancho chili powder, cumin, kosher salt, and smoked paprika.
  3. Marinate cauliflower: Dip cauliflower head into marinade until fully covered.
  4. Roast cauliflower: Transfer cauliflower to prepared pan or baking sheet. Roast for 40-50 minutes, or until a skewer easily pierces the center.
  5. Serve: Remove from oven and sprinkle with cilantro, almonds, and honey (if using).

Optional additions:

  • For extra flavor: Add a pinch of cayenne pepper or red pepper flakes to the marinade.
  • For a smoky flavor: Roast the cauliflower on a grill instead of in the oven.
  • For a tangy kick: Add a tablespoon of apple cider vinegar to the marinade.
  • For a cheesy twist: Top with crumbled feta cheese or goat cheese.
