Ingredients:
- 1 large cauliflower head, trimmed
- 1 cup Greek yogurt
- 1/4 cup What’s Gaby Cooking Chipotle Salsa
- 3 tablespoons olive oil
- Zest of 1 lime
- 2 tablespoons lime juice
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon ancho chili powder
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons kosher salt
- 1 teaspoon smoked paprika
- 1/2 cup finely grated cheddar cheese
- 1/4 cup chopped cilantro
- 1/4 cup chopped toasted almonds
- 1 tablespoon honey
Instructions:
- Preheat oven: Preheat oven to 400°F (200°C). Lightly cover an oven-proof skillet or baking sheet with non-stick spray.
- Make marinade: In a large bowl, whisk together Greek yogurt, chipotle salsa, olive oil, lime zest, lime juice, garlic powder, onion powder, ancho chili powder, cumin, kosher salt, and smoked paprika.
- Marinate cauliflower: Dip cauliflower head into marinade until fully covered.
- Roast cauliflower: Transfer cauliflower to prepared pan or baking sheet. Roast for 40-50 minutes, or until a skewer easily pierces the center.
- Serve: Remove from oven and sprinkle with cilantro, almonds, and honey (if using).
Optional additions:
- For extra flavor: Add a pinch of cayenne pepper or red pepper flakes to the marinade.
- For a smoky flavor: Roast the cauliflower on a grill instead of in the oven.
- For a tangy kick: Add a tablespoon of apple cider vinegar to the marinade.
