Air Fryer Chicken Cutlets

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced in half lengthwise
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 cup Italian dressing
  • 3/4 cup seasoned whole wheat breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dry Italian seasoning
  • 1 large egg, beaten
  • Olive oil spray
Optional additions:
  • 1/4 cup chopped spinach or kale
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Prep chicken: Slice chicken breasts in half lengthwise and pound to 1/4-inch thickness. Marinate in Italian dressing for at least 1 hour (longer is better).
  2. Prepare breading: Combine breadcrumbs, Parmesan cheese, and Italian seasoning in a shallow dish. Beat egg in another shallow dish.
  3. Bread chicken: Dip chicken in egg, then coat with breadcrumb mixture. Spray with olive oil.
  4. Air fry: Air fry chicken cutlets at 400°F (200°C) for 4 minutes per side, or until golden brown and cooked through.
  5. Serve: Serve immediately with your favorite dipping sauce or side dish.

Optional additions:

  • For extra flavor: Add spinach, kale, crumbled feta cheese, or red pepper flakes to the breadcrumb mixture.
  • For a richer texture: Use a combination of Parmesan and Gruyère cheese.
  • For a spicier kick: Add a pinch of cayenne pepper to the breadcrumb mixture.
