Apple Spice Muffins

Ingredients:

  • 4 eggs
  • 1 cup vegetable or canola oil
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 2 cups applesauce
  • 2 large Granny Smith apples, peeled, cored, and diced

Instructions:

  1. Preheat oven: Set your oven to 350°F (175°C).
  2. Prepare pans: Line muffin tins with paper liners or grease them.
  3. Mix wet ingredients: In a large bowl, whisk together eggs and oil.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Add apples: Stir in applesauce and diced apples.
  7. Fill muffin tins: Scoop batter into muffin tins, filling them almost to the top.
  8. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool: Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

  • For a moist muffin, don't overmix the batter.
  • You can add nuts, raisins, or chocolate chips to the batter for extra flavor.
  • For a healthier version, use whole wheat flour and unsweetened applesauce.
  • To store, place cooled muffins in an airtight container at room temperature.
