Baked Garlic Chicken

Ingredients:

  • 2 large chicken breasts, sliced in half vertically and lightly pounded
  • 2 large cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 cup Parmesan cheese, freshly grated
  • 3 tablespoons melted butter
Optional additions:
  • 1/4 cup chopped spinach or kale
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Preheat oven: Preheat oven to 425°F (220°C). Lightly spray a 9x13 baking dish with cooking oil and set aside.
  2. Pound chicken breasts: Slice chicken breasts in half lengthwise and pound them gently to even them out. Season both sides with salt and pepper.
  3. Combine breadcrumbs and Parmesan: Combine breadcrumbs and Parmesan cheese in a shallow dish.
  4. Sauté garlic: Warm olive oil in a large skillet over medium-high heat. Add garlic and stir for 30 seconds or until fragrant. Remove from heat.
  5. Coat chicken: Dip each chicken breast in the oil, then coat both sides in the breadcrumb mixture.
  6. Arrange chicken: Arrange chicken in the prepared baking dish and drizzle with melted butter.
  7. Bake: Bake on the middle shelf, uncovered, for approximately 15-20 minutes, or until cooked through. Turn on the broiler and broil for 1 1/2-2 minutes for a crispy top.

Optional additions:

  • For extra flavor: Add spinach, kale, crumbled feta cheese, or red pepper flakes to the breadcrumb mixture.
  • For a richer texture: Use a combination of Parmesan and Gruyère cheese.
  • For a spicier kick: Add a pinch of red pepper flakes to the breadcrumb mixture.
