Cilantro Scramble with Spiced Black Beans


Ingredients:

  • 2 teaspoons butter
  • 2 large eggs
  • 2 tablespoons milk
  • 3 tablespoons minced cilantro
  • Pinch of salt
  • 1/2 ounce crumbled cotija or feta cheese (optional)
  • 1/3 cup cooked spiced black beans (see recipe link or use canned black beans)
  • Cilantro for serving (optional)
  • Avocado for serving (optional)
  • Salsa or hot sauce for serving (optional)

Instructions:

  1. Heat a small nonstick skillet over medium-low heat. Add the butter and melt.
  2. In a bowl, whisk together the eggs, milk, minced cilantro, and salt.
  3. Pour the egg mixture into the preheated pan.
  4. Cook the eggs, stirring occasionally, until just set. This will take about 2-3 minutes.
  5. Remove the pan from the heat and stir in the cooked spiced black beans and crumbled cheese (if using).
  6. Serve the scrambled eggs with the black bean mixture on a plate.
  7. Garnish with additional chopped cilantro, sliced avocado, salsa, or hot sauce (optional).
