Delicious Garlic Herb Roasted Potatoes

Ingredients:

  • 3 pounds small white or red potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons minced garlic (about 6-7 cloves)
  • 2 tablespoons fresh parsley (or other preferred herbs)  
  • Salt and pepper to taste
Optional additions:
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground nutmeg

Instructions:

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Prepare potatoes: Slice potatoes into uniform pieces. Place in a large bowl and mix with olive oil, minced garlic, chopped parsley, salt, and pepper.
  3. Roast potatoes: Arrange potatoes on a sheet pan in a single layer, cut sides down. Roast for 20-25 minutes, stirring halfway through, until golden brown.
  4. Optional finishing touch: Sprinkle roasted potatoes with grated Parmesan cheese, red pepper flakes, and ground nutmeg for extra flavor.

Optional additions:

  • For extra flavor: Add grated Parmesan cheese, red pepper flakes, or ground nutmeg.
  • For a spicier kick: Increase the amount of red pepper flakes.
  • For a sweeter taste: Drizzle a little honey or maple syrup over the roasted potatoes.
