Ingredients:
- 4 large carrots, sliced lengthwise
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 tablespoon grated Parmesan cheese (optional)
- Sea salt and pepper to taste
- 1/4 cup avocado mayo
- 1 tablespoon Sriracha sauce
- Juice of 1/2 lemon
- Pinch of sea salt
Instructions:
- Preheat oven: Preheat oven to 425°F (220°C). Line a large sheet pan with foil.
- Prepare carrots: Wash, peel, and remove ends of carrots. Cut carrots in half lengthwise, then slice each half into 3-4 pieces.
- Toss carrots: Transfer carrot fries to a large sheet pan. Add olive oil, paprika, onion powder, Parmesan cheese (if using), salt, and pepper. Toss to coat evenly.
- Bake: Spread carrot fries on the sheet pan without overlapping. Bake for 20-25 minutes, turning halfway through.
- Make sriracha mayo sauce: While carrots are baking, mix sriracha mayo sauce ingredients in a small bowl.
- Serve: Garnish cooked carrots with fresh parsley or cilantro and serve with sriracha mayo sauce.
Optional additions:
- For extra flavor: Add a pinch of garlic powder or cayenne pepper to the seasoning mix.
- For a sweeter taste: Drizzle a little honey or maple syrup over the cooked carrots.
- For a richer texture: Add a dollop of Greek yogurt or sour cream to the sriracha mayo sauce.
