Oven Baked Carrot Fries


Ingredients:

  • 4 large carrots, sliced lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 tablespoon grated Parmesan cheese (optional)
  • Sea salt and pepper to taste
For the Sriracha Mayo Sauce:
  • 1/4 cup avocado mayo
  • 1 tablespoon Sriracha sauce
  • Juice of 1/2 lemon
  • Pinch of sea salt

Instructions:

  1. Preheat oven: Preheat oven to 425°F (220°C). Line a large sheet pan with foil.
  2. Prepare carrots: Wash, peel, and remove ends of carrots. Cut carrots in half lengthwise, then slice each half into 3-4 pieces.
  3. Toss carrots: Transfer carrot fries to a large sheet pan. Add olive oil, paprika, onion powder, Parmesan cheese (if using), salt, and pepper. Toss to coat evenly.
  4. Bake: Spread carrot fries on the sheet pan without overlapping. Bake for 20-25 minutes, turning halfway through.
  5. Make sriracha mayo sauce: While carrots are baking, mix sriracha mayo sauce ingredients in a small bowl.
  6. Serve: Garnish cooked carrots with fresh parsley or cilantro and serve with sriracha mayo sauce.

Optional additions:

  • For extra flavor: Add a pinch of garlic powder or cayenne pepper to the seasoning mix.
  • For a sweeter taste: Drizzle a little honey or maple syrup over the cooked carrots.
  • For a richer texture: Add a dollop of Greek yogurt or sour cream to the sriracha mayo sauce.
