Turkish Tomato Scrambled Eggs

 Ingredients:

  • 2 tablespoons olive oil
  • 3 green peppers, chopped
  • 4 tomatoes, peeled and diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 4 eggs
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • Parsley for garnish

Instructions:

  1. Heat the oil: In a skillet, heat the olive oil over medium heat.
  2. Cook the peppers: Add the chopped green peppers and cook for 2-3 minutes, or until softened.
  3. Add the tomatoes: Stir in the diced tomatoes and season with salt and paprika. Cook for another 5-7 minutes, or until the tomatoes are tender.
  4. Make space for the eggs: Create small wells in the tomato mixture using a spoon.
  5. Crack the eggs: Carefully crack one egg into each well.
  6. Cook gently: Cook uncovered until the egg whites are set and the yolks are still runny, about 8-10 minutes.
  7. Garnish and serve: Remove from heat, garnish with parsley, and serve immediately.

Tips:

  • For a spicier menemen, add a pinch of cayenne pepper or red pepper flakes.
  • For a creamier texture, stir in a dollop of Greek yogurt or sour cream.
  • Serve menemen with toasted bread, avocado, or a side of feta cheese.
