Almond Croissants With Almond Cream Filling


Ingredients:

  • 10 Day-old Flaky Croissants
  • 8 tablespoons (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup blanched almond flour
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 teaspoon almond extract
  • Sliced almonds, for garnish (optional)
  • Powdered sugar, for garnish (optional)

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C) and position a rack in the middle. Line baking sheets with parchment paper.
  2. Prepare the Croissants: Cut each croissant in half lengthwise.
  3. Make the Almond Cream Filling:
    • Beat butter and sugar until light and fluffy.
    • Beat in almond flour, all-purpose flour, and salt.
    • Add egg and almond extract, mixing well.
  4. Assemble the Croissants:
    • Spread almond cream on the bottom half of each croissant.
    • Top with the other half of the croissant.
    • Spread more almond cream on top of the croissant.
    • Sprinkle with sliced almonds, if desired.
  5. Bake: Place the croissants on the prepared baking sheets and bake for 12-15 minutes, or until golden brown.
  6. Cool and Serve: Let the croissants cool slightly before serving. Dust with powdered sugar, if desired.

  • Use Day-Old Croissants: Day-old croissants are ideal for this recipe as they are easier to work with and less likely to become soggy.
  • Almond Flour: Blanched almond flour is preferred for a finer texture, but almond meal can be used as a substitute.
  • Flavor Variations: Experiment with different nut flours like hazelnut or chestnut, and adjust the flavor extract accordingly.
  • Reheating: If you have leftover croissants, reheat them in a 325°F (165°C) oven for a few minutes to restore their crispiness.
