Cinnamon Roll Muffins


Ingredients:

For the Muffins:

  • 200g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 90g unsalted butter, melted
  • 100g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 175g buttermilk

For the Cinnamon Swirl:

  • 50g unsalted butter, softened
  • 50g brown sugar
  • 1 tablespoon ground cinnamon
  • Optional: 1/4 teaspoon nutmeg

Instructions:

  1. Preheat oven: Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. Combine wet ingredients: In a large bowl, whisk together melted butter, sugar, egg, and vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Make cinnamon swirl: In a small bowl, cream together butter, brown sugar, and cinnamon until smooth.
  6. Assemble muffins: Spoon batter into muffin tins, filling them about 2/3 full. Drop dollops of cinnamon swirl mixture on top of the batter. Swirl with a knife or toothpick.
  7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Optional Additions:

  • For extra flavor: Add chopped nuts (e.g., walnuts, pecans) or dried fruit (e.g., raisins, cranberries) to the batter.
  • For a richer flavor: Use a combination of butter and oil.
  • For a healthier twist: Use whole wheat flour and a natural sweetener like honey or maple syrup.
