Homemade Mexican Burgers


Ingredients:

For the Burgers:
  • 12 ounces ground beef (or 16 ounces for larger burgers)
  • 2 tablespoons taco seasoning
  • 1/4 cup crushed tortilla chips
  • 1 egg, beaten
  • 1 roasted jalapeno pepper, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon olive oil
  • 2 large slices cheddar cheese
  • 1 roasted jalapeno pepper, sliced into rings (for serving)
For Serving:
  • Creamy guacamole (optional)

Instructions:

  1. Combine Ingredients: In a mixing bowl, combine the ground beef, taco seasoning, crushed tortilla chips, beaten egg, chopped jalapeno pepper, chopped onion, and chopped garlic. Mix gently, being careful not to overmix.
  2. Sauté the Aromatics: Heat the olive oil in a pan over medium heat. Add the onion and cook for about 5 minutes, or until softened. Add the garlic and cook for 1 minute, or until fragrant. Remove from heat.
  3. Form the Patties: Add the cooked onion and garlic to the beef mixture. Mix gently again. Form the mixture into two large patties.
  4. Cook the Burgers: Cook the burgers in the same pan over medium heat for about 5 minutes per side, or until cooked to your desired doneness.
  5. Add Cheese and Serve: Top each burger with a slice of cheese and cover the pan for a minute, or until the cheese melts. Serve the burgers on buns, topped with guacamole and sliced jalapeno peppers, if desired.
