Grilled Chicken with Pepperoncini Garlic Butter

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 6 tablespoons butter
  • 1 clove garlic, minced
  • 1/4 cup pepperoncini brine
  • 1/4 cup chopped pepperoncini peppers
  • 1 pint cherry tomatoes, halved
  • 1/2 cucumber, chopped
  • 1/4 red onion, thinly sliced
  • Fresh parsley, chopped
  • Feta cheese, crumbled
  • Pita bread or crackers

Instructions:

  1. Marinate Chicken: Combine chicken, garlic powder, onion powder, paprika, salt, and olive oil in a bowl. Marinate for at least 30 minutes.
  2. Grill Chicken: Grill chicken until cooked through and slightly charred. Let rest before slicing.
  3. Make Pepperoncini Butter Sauce: Melt butter in a small saucepan. Add minced garlic and pepperoncini brine. Simmer for a few minutes until slightly thickened. Stir in chopped pepperoncini peppers.
  4. Prepare Cucumber Salad: Combine cherry tomatoes, cucumber, red onion, salt, pepper, olive oil, and vinegar in a bowl. Toss to coat.
  5. Assemble: Serve grilled chicken with pepperoncini butter sauce, cucumber salad, feta cheese, parsley, and pita bread or crackers.

Optional Additions:

  • For extra flavor: Add a squeeze of lemon juice to the cucumber salad.
  • For a richer flavor: Use Greek yogurt instead of sour cream in the marinade.
  • For a spicier kick: Add a pinch of red pepper flakes to the pepperoncini butter sauce.
