- Salt and pepper to taste

Instructions:
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare Sheet Pan: Line a baking sheet with parchment paper.
- Combine Ingredients: Place chicken, red onion, and carrots on the prepared baking sheet.
- Make the Glaze: In a small bowl, whisk together honey, Dijon mustard, melted butter, and maple syrup.
- Season and Glaze: Drizzle the glaze over the chicken and vegetables. Season with chili powder, salt, and pepper.
- Roast: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Broil: For a caramelized finish, broil for an additional minute or two.
- Serve: Garnish with fresh scallions and serve immediately.
