Honey and Spice Roasted Chicken and Carrots.


Ingredients:

  • 1 lb chicken breast tenders
  • 1/2 red onion, thinly sliced
  • 1 cup carrots, sliced into oval rounds
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp melted butter
  • 1 tbsp maple syrup
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh scallions, for serving.

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare Sheet Pan: Line a baking sheet with parchment paper.
  3. Combine Ingredients: Place chicken, red onion, and carrots on the prepared baking sheet.
  4. Make the Glaze: In a small bowl, whisk together honey, Dijon mustard, melted butter, and maple syrup.
  5. Season and Glaze: Drizzle the glaze over the chicken and vegetables. Season with chili powder, salt, and pepper.
  6. Roast: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Broil: For a caramelized finish, broil for an additional minute or two.
  8. Serve: Garnish with fresh scallions and serve immediately.
