Patty Melt with French Onion Au Jus


Ingredients:

For the Caramelized Onions and Au Jus Broth:

  • Yellow or white onions
  • Beef broth
  • White wine
  • Brandy
  • Thyme sprigs
  • Bay leaves
  • Salt and pepper
  • Canola oil
  • Chopped parsley

For the Patty Melt:

  • Ground beef (80/20)
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Brioche bread
  • Garlic mayonnaise
  • Swiss cheese
  • Butter

Instructions:

Caramelized Onions and Au Jus Broth:

  1. Caramelize the Onions: Cook thinly sliced onions slowly in oil until dark brown.
  2. Deglaze and Simmer: Add brandy and white wine, then beef broth, thyme, and bay leaves. Simmer, strain, and keep warm.

Patty Melt:

  1. Form and Cook Patties: Form ground beef into balls, then smash them on a hot skillet. Season with salt, pepper, and garlic powder.
  2. Add Cheese and Onions: Top cooked patties with Swiss cheese and caramelized onions.
  3. Assemble the Melt: Layer brioche bread, garlic mayonnaise, patties, more mayonnaise, and another bread slice.
  4. Toast and Serve: Toast the assembled melts on the skillet, then slice and serve with the Au Jus broth.
