Steak and Bacon Skewers


Ingredients:

For the Skewers:

  • 4 lbs Top Sirloin, thinly sliced
  • 3 lbs Bacon, sliced
  • 3 lbs Ground Sausage
  • 2 cups Chopped Parsley
  • 1.5 cups Minced Garlic
  • 1 cup Cowboy Butter Rub

For the Fries:

  • Frozen Fries
  • Frying Oil
  • Chimichurri Sauce (recipe below)

Instructions:

Preparing the Skewers:

  1. Layer the Ingredients: Create layers of steak, bacon, sausage, parsley, and garlic, wrapping them in foil and freezing for at least an hour.
  2. Cut and Skewer: Cut the frozen block into 2x2-inch cubes and skewer them.
  3. Grill: Grill the skewers over medium heat until cooked through (about 8-10 minutes per side).

Making the Fries:

  1. Fry the Fries: Fry the frozen fries according to package instructions.
  2. Serve: Serve the grilled skewers with the fries and chimichurri sauce.

Chimichurri Sauce:

Ingredients:

  • 1 cup finely chopped fresh parsley
  • 3-4 minced garlic cloves
  • 2 tablespoons fresh oregano (or 1 teaspoon dried)
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients: Combine all ingredients in a bowl.
  2. Let it Infuse: Let the chimichurri sit for at least 30 minutes to allow the flavors to meld.

Tips:

  • Marinating the Meat: For extra flavor, marinate the meat in a mixture of olive oil, lemon juice, garlic, and herbs before assembling the skewers.
  • Grilling Technique: Use a medium-high heat to sear the skewers and lock in the juices.
  • Chimichurri Variations: Experiment with different herbs, such as cilantro or basil, to create unique flavor profiles.
  • Side Dishes: Serve the skewers with other grilled vegetables, like bell peppers and onions, for a complete meal.
