GOAT BBQ Beef Melt

Ingredients:

  • For the Brisket:
    • 2 Chuck Roasts (about 2.5 lbs each)
    • 1 cup BBQ Rub
    • 2 tablespoons Neutral Oil
  • For the Crutch:
    • 32 oz Beef Broth
    • 1/2 cup Beef Tallow
    • 2 cups Sliced White Onions
  • For the Sliders:
    • 8-10 Texas Toast Slices
    • 6-8 Cheddar Cheese Slices
    • 1 cup Melted Butter
    • 1 cup BBQ Sauce

Instructions:

Preparing the Brisket:

  1. Season the Brisket: Rub the chuck roasts with the BBQ rub and olive oil.
  2. Smoke the Brisket: Smoke the seasoned briskets at 250°F until they reach an internal temperature of 165°F.
  3. Crutching the Brisket: Wrap the cooked briskets in foil with beef broth, beef tallow, and sliced onions. Return to the smoker at 300°F until tender and easily shreddable.

Making the Brisket Sliders:

  1. Prepare the Sliders: Assemble the sliders with Texas toast, cheddar cheese, pulled brisket, and BBQ sauce.
  2. Toast the Sliders: Toast the assembled sliders in a skillet with melted butter until the bread is golden brown and the cheese is melted.

Tips:

  • Choosing the Right Cut: While chuck roasts can be used, a classic brisket cut is often preferred for its rich flavor and tenderness.
  • Smoking Temperature: The optimal smoking temperature can vary depending on your smoker and the desired smoke ring. Experiment with temperatures between 225°F and 275°F.
  • Crutching: Crutching helps to maintain moisture and accelerate the cooking process.
  • Resting the Brisket: Let the brisket rest for at least 30 minutes before shredding. This allows the juices to redistribute.
