Ingredients:
For the Kofta:
- 1.25 lbs ground lamb or sirloin
- 3 tbsp fresh herbs (oregano, mint, thyme, rosemary)
- 1 1/4 tsp kosher salt
- 1 tsp dried oregano
- 1/4 tsp ground cinnamon
- 1 1/2 tsp ground cumin
- 1/3 cup breadcrumbs
- 1 tbsp lemon juice
- 4 cloves garlic, minced
- 1 large egg
- 1 large red onion, grated
- Pita bread
- 1 tbsp olive oil
For the Yogurt Sauce:
- 1/2 cup non-fat Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp finely chopped dill
- 1 small garlic clove, grated
- 1/4 tsp kosher salt
- 1/3 cup grated cucumber
Instructions:
- Prepare the Kofta: Combine ground meat, herbs, salt, spices, breadcrumbs, lemon juice, garlic, egg, and grated onion in a large bowl. Mix well but avoid overmixing.
- Assemble Pitas: Divide the mixture into 8 equal portions. Place each portion inside a pita pocket, shaping it into a small patty.
- Cook Pitas: Brush pitas with olive oil and place on a baking sheet. Bake in a preheated 400°F (200°C) oven for 15-20 minutes, or until golden brown and the filling is cooked through.
- Make Yogurt Sauce: Combine Greek yogurt, lemon juice, dill, garlic, salt, and grated cucumber in a bowl. Mix well.
- Serve: Serve kofta pitas with yogurt sauce, fresh vegetables like cucumber and tomato slices.
