Blueberry & Custard Brioche Bun with Crumble

Ingredients:

Custard:

  • 350ml whole milk
  • 4 large egg yolks
  • 50g cornflour
  • 100g golden caster sugar
  • 1 tbsp vanilla paste

Brioche Dough:

  • 275g plain flour
  • 5g fast-action dried yeast
  • 25g caster sugar
  • 2 eggs
  • 50ml whole milk
  • 80g unsalted butter, cubed and softened

Streusel Topping:

  • 65g white sugar
  • 80g plain flour
  • 45g unsalted melted butter
  • 150g blueberries

Instructions:

Custard:

  1. Heat the Milk:
    In a pan over medium heat, warm the whole milk until it is just about to boil. Remove from the heat and set aside.

  2. Prepare the Egg Mixture:
    In a heatproof bowl, whisk together the egg yolks, golden caster sugar, cornflour, and vanilla paste until you have a thick mixture.

  3. Combine Milk and Egg Mixture:
    Gradually add 75ml of the hot milk at a time to the egg mixture, whisking continuously to thin out the consistency. Repeat this until all the hot milk is incorporated.

  4. Cook the Custard:
    Pour the mixture into a pan and whisk over low heat until the custard thickens to your desired consistency.

  5. Cool the Custard:
    Once thickened, pour the custard into a bowl, cover with cling film, and place it in the fridge to cool.

Brioche Dough:

  1. Prepare the Oven:
    Preheat the oven to 200°C (180°C fan). Line a baking tray with greaseproof paper.

  2. Make the Dough:
    In the bowl of a stand mixer, combine the yeast, plain flour, and caster sugar. Make a well in the center and add the eggs and milk.

  3. Mix the Dough:
    Fit the dough hook on the stand mixer and mix on low speed until the dough begins to come together. Gradually add the cubed butter, mixing on medium speed until fully incorporated and the dough becomes smooth.

  4. Shape the Dough:
    Lightly flour a work surface and divide the dough into 6 equal balls. Place the dough balls onto the prepared baking tray and allow them to rise for at least 25 minutes.

Streusel Topping:

  1. Make the Streusel:
    In a bowl, combine the white sugar, plain flour, and melted butter. Mix until you achieve a crumbly texture. Set aside.

Assembly:

  1. Create Wells in the Dough:
    Once the dough has risen, use a spoon to make a slight well in the center of each dough ball.

  2. Fill with Custard:
    Transfer the cooled custard into a piping bag and pipe it into the center of each dough ball.

  3. Add Toppings:
    Sprinkle the blueberries and streusel topping over each filled dough ball.

  4. Bake:
    Bake in the preheated oven for 20 minutes, or until the brioche is golden brown and the custard is set.
