- 3 pounds russet potatoes, peeled and cubed

Instructions:
- Preheat Oven: Set the oven to 350°F (175°C).
- Prepare Potatoes: Boil cubed potatoes in salted water for 15-20 minutes until tender. Drain and set aside.
- Make Cheese Sauce:
- In a saucepan, melt butter over medium heat.
- Whisk in the flour and cook for about 1 minute.
- Gradually add milk, whisking until smooth, and cook for 5 minutes until thickened.
- Stir in shredded cheddar cheese until melted and smooth, then season with salt, pepper, and garlic powder.
- Combine Potatoes & Sauce: Gently mix the cooked potatoes with the cheese sauce in a large bowl.
- Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish.
- Add Toppings (Optional):
- Sprinkle crushed cornflakes or breadcrumbs and additional cheese on top.
- Drizzle melted butter over the top if using cornflakes/breadcrumbs.
- Bake: Bake for 30-40 minutes or until bubbly and golden brown on top.
- Garnish & Serve: Let cool slightly, garnish with chopped green onions or chives, and serve!
