Cheesy Potatoes


Ingredients:

  • 3 pounds russet potatoes, peeled and cubed
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 2 cups shredded sharp cheddar cheese (plus extra for topping)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • Optional: chopped green onions or chives for garnish
  • Optional: 1 cup crushed cornflakes or breadcrumbs for topping
  • Optional: additional melted butter for topping

Instructions:

  1. Preheat Oven: Set the oven to 350°F (175°C).
  2. Prepare Potatoes: Boil cubed potatoes in salted water for 15-20 minutes until tender. Drain and set aside.
  3. Make Cheese Sauce:
    • In a saucepan, melt butter over medium heat.
    • Whisk in the flour and cook for about 1 minute.
    • Gradually add milk, whisking until smooth, and cook for 5 minutes until thickened.
    • Stir in shredded cheddar cheese until melted and smooth, then season with salt, pepper, and garlic powder.
  4. Combine Potatoes & Sauce: Gently mix the cooked potatoes with the cheese sauce in a large bowl.
  5. Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish.
  6. Add Toppings (Optional):
    • Sprinkle crushed cornflakes or breadcrumbs and additional cheese on top.
    • Drizzle melted butter over the top if using cornflakes/breadcrumbs.
  7. Bake: Bake for 30-40 minutes or until bubbly and golden brown on top.
  8. Garnish & Serve: Let cool slightly, garnish with chopped green onions or chives, and serve!
