Ingredients:
- 20 Medjool dates
- 1/2 cup peanut butter
- 3 tablespoons roasted peanuts
- 1 1/4 cup semi-sweet or dark chocolate chips (or chopped chocolate)
- 1/2 teaspoon avocado or coconut oil (optional, but helps smooth the chocolate)
- Flaky sea salt (for topping)
Instructions:
Prep the Dates:
- Line a plate or small baking sheet with parchment paper.
- Using a small paring knife, make a slit lengthwise in each date, cutting halfway through (not all the way through). Remove the pit and gently open the date.
Stuff the Dates:
- Spoon about 1/2 tablespoon of peanut butter into each date.
- Top with a few roasted peanuts.
- Place the stuffed dates on the lined plate or baking sheet and freeze for at least 1 hour until solid.
Melt the Chocolate:
- In a double boiler, melt the chocolate chips (or chopped chocolate) over low heat, stirring occasionally. If desired, add 1/2 teaspoon of avocado or coconut oil to help the chocolate become thinner and more fluid.
- Alternatively, you can melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring after each interval until completely smooth.
Dip the Dates:
- Once the dates are frozen, dip them one at a time into the melted chocolate, using a fork to flip them and ensure they are fully coated. Tap the fork on the side of the bowl to remove excess chocolate.
- Place the dipped dates back onto the parchment paper and immediately sprinkle them with flaky sea salt.
Set the Chocolate:
- Let the chocolate harden on the dates. If the chocolate begins to harden too quickly while dipping, you can place the bowl back on the double boiler to re-melt the chocolate.
Store and Serve:
- Store the dates in an airtight container in the fridge for up to 2 weeks, or in the freezer for up to 4 months. They are best served cold from the fridge or at room temperature.
Notes:
- Ingredient Variations: You can swap out peanut butter for almond butter or any nut butter of your choice, and feel free to use milk chocolate or any chocolate you prefer.
- Texture Tips: If the chocolate becomes too thick while dipping, simply reheat it slightly to make it easier to coat the dates.
- Storage Tip: These dates store well in the fridge or freezer, and they’re perfect for meal prepping or as a sweet treat to keep on hand.
These chocolate-covered, peanut butter-filled dates are sweet, salty, and packed with delicious flavors. They make a great snack or dessert and are sure to be a hit with anyone who tries them!
