Date Snickers 5-ingredient recipe!

Ingredients:

  • 20 Medjool dates
  • 1/2 cup peanut butter
  • 3 tablespoons roasted peanuts
  • 1 1/4 cup semi-sweet or dark chocolate chips (or chopped chocolate)
  • 1/2 teaspoon avocado or coconut oil (optional, but helps smooth the chocolate)
  • Flaky sea salt (for topping)

Instructions:

  1. Prep the Dates:

    • Line a plate or small baking sheet with parchment paper.
    • Using a small paring knife, make a slit lengthwise in each date, cutting halfway through (not all the way through). Remove the pit and gently open the date.
  2. Stuff the Dates:

    • Spoon about 1/2 tablespoon of peanut butter into each date.
    • Top with a few roasted peanuts.
    • Place the stuffed dates on the lined plate or baking sheet and freeze for at least 1 hour until solid.
  3. Melt the Chocolate:

    • In a double boiler, melt the chocolate chips (or chopped chocolate) over low heat, stirring occasionally. If desired, add 1/2 teaspoon of avocado or coconut oil to help the chocolate become thinner and more fluid.
    • Alternatively, you can melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring after each interval until completely smooth.
  4. Dip the Dates:

    • Once the dates are frozen, dip them one at a time into the melted chocolate, using a fork to flip them and ensure they are fully coated. Tap the fork on the side of the bowl to remove excess chocolate.
    • Place the dipped dates back onto the parchment paper and immediately sprinkle them with flaky sea salt.
  5. Set the Chocolate:

    • Let the chocolate harden on the dates. If the chocolate begins to harden too quickly while dipping, you can place the bowl back on the double boiler to re-melt the chocolate.
  6. Store and Serve:

    • Store the dates in an airtight container in the fridge for up to 2 weeks, or in the freezer for up to 4 months. They are best served cold from the fridge or at room temperature.

  • Ingredient Variations: You can swap out peanut butter for almond butter or any nut butter of your choice, and feel free to use milk chocolate or any chocolate you prefer.
