
Ingredients:
- 1 lb brussel sprouts, halved
- 4 slices thick-cut bacon
- 1 tablespoon avocado oil
- Parsley or basil (for garnish)
- ¼ teaspoon crushed red pepper (optional)
Honey Dijon Dressing:
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 1 teaspoon honey
- Juice of ½ lemon
- 1 clove garlic, minced or grated
- Salt and pepper, to taste
Method:
Prepare the brussel sprouts:
- Preheat the oven to 425°F.
- Halve the brussel sprouts and toss with avocado oil, salt, and pepper. Arrange in a single layer on a baking sheet.
- Use kitchen shears to cut the bacon over the baking sheet so the bacon pieces fall on top of the brussel sprouts.
Roast:
- Bake for 25 minutes, or 22 minutes if your bacon is thin, to avoid burning. The brussel sprouts should be crispy and golden.
Make the dressing:
- While the brussel sprouts are roasting, whisk together the Dijon mustard, olive oil, honey, lemon juice, minced garlic, and a few cracks of salt and pepper.
Toss and garnish:
- Once the brussel sprouts and bacon are done, toss them with the Honey Dijon dressing.
- Garnish with parsley or basil and a sprinkle of crushed red pepper flakes for extra flavor.
