Honey Dijon Brussel Sprouts


Ingredients:

  • 1 lb brussel sprouts, halved
  • 4 slices thick-cut bacon
  • 1 tablespoon avocado oil
  • Parsley or basil (for garnish)
  • ¼ teaspoon crushed red pepper (optional)

Honey Dijon Dressing:

  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Juice of ½ lemon
  • 1 clove garlic, minced or grated
  • Salt and pepper, to taste

Method:

  1. Prepare the brussel sprouts:

    • Preheat the oven to 425°F.
    • Halve the brussel sprouts and toss with avocado oil, salt, and pepper. Arrange in a single layer on a baking sheet.
    • Use kitchen shears to cut the bacon over the baking sheet so the bacon pieces fall on top of the brussel sprouts.
  2. Roast:

    • Bake for 25 minutes, or 22 minutes if your bacon is thin, to avoid burning. The brussel sprouts should be crispy and golden.
  3. Make the dressing:

    • While the brussel sprouts are roasting, whisk together the Dijon mustard, olive oil, honey, lemon juice, minced garlic, and a few cracks of salt and pepper.
  4. Toss and garnish:

    • Once the brussel sprouts and bacon are done, toss them with the Honey Dijon dressing.
    • Garnish with parsley or basil and a sprinkle of crushed red pepper flakes for extra flavor.
  5. Serve:

    • Serve and enjoy this delicious crispy, tangy dish!
