No Mayo Egg Salad with Avocado


Ingredients:

  • 6 eggs, hard boiled
  • 2 avocados
  • ¼ cup Greek yogurt
  • ½ lemon, juiced
  • ¼ cup parsley, chopped
  • ½ cup spring onion, chopped
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Step 1: Prepare the Eggs

Boil the eggs until hard boiled and allow them to cool.


Step 2: Mash the Avocados

In a bowl, mash the avocados. Juice the lemon and add it to the bowl. Then, chop the parsley and spring onion and add them as well.


Step 3: Add the Greek Yogurt & Season

Add the Greek yogurt and red pepper flakes (if using) to the mixture. Season with salt and pepper to taste.


Step 4: Add the Eggs

Cut the cooled hard boiled eggs into cubes and add them to the mixture.


Step 5: Mix and Serve

Mix everything together until well combined. Enjoy!
