Instructions:

Preheat and Prepare:
- Preheat the oven to 325°F (165°C).
- Cut the boneless beef chuck roast into chunks and pat dry with paper towels.
- Peel the pearl onions and carrots, and slice the cremini mushrooms.
- Mince the garlic cloves and prepare mashed potatoes (if you want them as a side).
- Tie the parsley and thyme together using kitchen twine.

- In a large Dutch oven or heavy-bottomed pot, brown the beef chunks in batches until they are deeply browned on all sides. Once browned, remove the beef and set aside.
