Caramel Apple Pie Cookies


 Ingredients:

  • 1 package (14.1 ounces) rolled refrigerated unbaked pie crusts (2 crusts)
  • 1 cup purchased apple pie filling
  • 1/4 cup caramel sauce
  • 1 tablespoon sugar
  • 1/4 teaspoon apple pie spice
  • 1 tablespoon half and half

Instructions:

  1. Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with parchment paper.
  2. Pulse the apple pie filling in a food processor until in 1/4-inch chunks.
  3. Roll out one pie crust into a 14-inch circle. Cut into 1/4-inch wide strips.
  4. Roll out the remaining pie crust into a 13-inch circle. Spread with caramel sauce and apple pie filling.
  5. Create a lattice top with the dough strips.
  6. Cut rounds from the pastry using a 2 1/2-inch diameter cookie cutter.
  7. Transfer the cookies to the prepared baking sheets.
  8. Stir together the sugar and apple pie spice in a small bowl.
  9. Brush the cookies with half and half and sprinkle with the sugar and spice mixture.
  10. Bake for 12 minutes, or until golden brown.
  11. Cool on the baking sheets on wire racks for 20 minutes. Serve warm.
