Ingredients:
- 1 package (14.1 ounces) rolled refrigerated unbaked pie crusts (2 crusts)
- 1 cup purchased apple pie filling
- 1/4 cup caramel sauce
- 1 tablespoon sugar
- 1/4 teaspoon apple pie spice
- 1 tablespoon half and half
Instructions:
- Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with parchment paper.
- Pulse the apple pie filling in a food processor until in 1/4-inch chunks.
- Roll out one pie crust into a 14-inch circle. Cut into 1/4-inch wide strips.
- Roll out the remaining pie crust into a 13-inch circle. Spread with caramel sauce and apple pie filling.
- Create a lattice top with the dough strips.
- Cut rounds from the pastry using a 2 1/2-inch diameter cookie cutter.
- Transfer the cookies to the prepared baking sheets.
- Stir together the sugar and apple pie spice in a small bowl.
- Brush the cookies with half and half and sprinkle with the sugar and spice mixture.
- Bake for 12 minutes, or until golden brown.
- Cool on the baking sheets on wire racks for 20 minutes. Serve warm.
