- Pinch of Salt
- Flour
- Eggs
- Granulated Sugar
- Light Brown Sugar
- Vanilla Extract
- Coffee Shot
- Oreo Cookies
**Instructions:**
1. Begin by melting the dark cooking chocolate. Place it in a heatproof bowl and heat in the microwave in 30-second intervals, stirring after each, until fully melted. Alternatively, use a double boiler. Allow it to cool slightly.
2. In a small mixing bowl (the same one used for the cookie dough ingredients), combine flour, Dutch processed cocoa powder, and a pinch of salt. Use a whisk to thoroughly blend them.
3. Moving back to the large mixing bowl, where you previously prepared the cookie dough, add in eggs, both granulated and light brown sugars, as well as vanilla extract. With an electric hand mixer, beat until the mixture turns pale, fluffy, and doubles in volume. This usually takes around 2-3 minutes.
4. Introduce the coffee shot and mix until thoroughly combined.
5. Now, incorporate the cooled melted chocolate mixture. Whisk until the mixture is well blended, using a spatula to scrape down the sides of the bowl.
6. Gently fold in the dry ingredients using the spatula until no traces of dry ingredients remain.
7. Spread the Oreo cookies evenly on top of the cookie dough in the baking tin. Pour the brownie mixture over them, ensuring an even distribution.
8. Bake for 22-25 minutes or until a toothpick inserted into the center comes out with moist crumbs. Remove from the oven and let it cool at room temperature. Then, transfer to the fridge to cool for 2 hours before slicing using a large knife.

- Dark Cooking Chocolate: I used Nestle cooking chocolate. Cooking chocolate is recommended for this recipe as it's designed for baking without seizing.
- Dutch Processed Cocoa Powder: This is an unsweetened cocoa powder with lower acidity and rich chocolate flavor.
