Ingredients:
- 1 tablespoon olive oil
- 1 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 1/2 pounds small potatoes (1 to 1.5 inches in diameter), halved

Directions:
- Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Brush the bottom of a baking dish with olive oil and sprinkle with Parmesan cheese.
- In a large bowl, toss the potatoes with olive oil, salt, and pepper.
- Arrange the potatoes cut-side down in the prepared baking dish, pressing them into the Parmesan cheese.
- Roast in the preheated oven for 20-25 minutes, or until the Parmesan cheese is golden brown and the potatoes are tender.
- Remove the potatoes from the oven and let them cool for 5 minutes before breaking them apart.
Optional Dipping Sauce:
- 1/4 cup mayonnaise
- 1 tablespoon gochujang (Korean chili bean paste) or sriracha
To make the dipping sauce, simply whisk together the mayonnaise and gochujang (or sriracha). Serve the potatoes with the dipping sauce for a delicious and flavorful snack or side dish.
Tips:
- For a richer flavor, use full-fat mayonnaise in the dipping sauce.
