Crispy Parmesan Roast Potatoes

 

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 1/2 pounds small potatoes (1 to 1.5 inches in diameter), halved
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Brush the bottom of a baking dish with olive oil and sprinkle with Parmesan cheese.
  3. In a large bowl, toss the potatoes with olive oil, salt, and pepper.
  4. Arrange the potatoes cut-side down in the prepared baking dish, pressing them into the Parmesan cheese.
  5. Roast in the preheated oven for 20-25 minutes, or until the Parmesan cheese is golden brown and the potatoes are tender.
  6. Remove the potatoes from the oven and let them cool for 5 minutes before breaking them apart.

Optional Dipping Sauce:

  • 1/4 cup mayonnaise
  • 1 tablespoon gochujang (Korean chili bean paste) or sriracha

To make the dipping sauce, simply whisk together the mayonnaise and gochujang (or sriracha). Serve the potatoes with the dipping sauce for a delicious and flavorful snack or side dish.

Tips:

  • For a richer flavor, use full-fat mayonnaise in the dipping sauce.
  • If you don't have gochujang, you can substitute sriracha or another type of hot sauce.
  • Season the potatoes with your favorite herbs and spices before roasting, such as garlic powder, onion powder, or Italian seasoning.
  • Serve the potatoes immediately for the best flavor and texture.
