Ingredients:
- 1 3/4 cups all-purpose flour
- 1/3 cup white sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 egg, lightly beaten
- 1/3 cup melted butter
- 1 cup fresh blueberries
Instructions:
- Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line them with muffin liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, egg, and melted butter.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Fold in the blueberries.
- Spoon the batter into the prepared muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Serve warm.
Cook's Note:
- Finely chop the fruit and top with a teaspoon of sugar, if desired. You can also use jumbo muffin pans, which will make 6 muffins.
