Everything Bagel Chicken Flatbread

 

Ingredients:

  • 1 pound prepared pizza dough
  • 2 tablespoons everything bagel seasoning, divided
  • 1 tablespoon olive oil
  • 1/4 cup sour cream
  • 2 tablespoons salsa
  • 1/3 cup shredded quesadilla cheese blend
  • 1/4 cup crumbled cotija cheese
  • 1 cooked chicken breast, diced
  • 1 avocado, sliced
  • 1/2 teaspoon Tajin seasoning, or to taste (optional)

Instructions:

  1. Preheat a gas grill with all burners on high for 10 to 15 minutes.
  2. Shape the pizza dough into a flatbread and brush one side with olive oil. Sprinkle with 4 teaspoons of everything bagel seasoning and press it into the dough.
  3. Reduce the flame on half of the grill burners to low, to create areas of direct and indirect heat.
  4. Carefully place the dough, olive oil side facing down, onto the grill over direct heat. Close the cover and let the dough grill until the bottom is just barely cooked and shows char marks, about 1 to 3 minutes.
  5. Remove the flatbread to a baking sheet, grilled side up.
  6. Stir together the sour cream and salsa and spread the mixture over the grilled side of the flatbread. Scatter the quesadilla cheese, cotija cheese, and chicken evenly over the top.
  7. Return the flatbread to the indirect heat side of the grill and grill until the bread is puffed and golden brown and the cheese is melted, about 3 minutes.
  8. Carefully remove the flatbread to a cutting board or plate. Add the avocado slices and sprinkle with the remaining bagel seasoning and Tajin seasoning (optional). Cut into wedges and serve.

Notes:

  • If you don't have a gas grill, you can cook the flatbread in a preheated oven at 450 degrees Fahrenheit for 10-12 minutes, or until the bread is puffed and golden brown and the cheese is melted.
  • You can also add other toppings to your flatbread, such as sliced tomatoes, onions, or jalapeños.
  • If you don't have Tajin seasoning, you can substitute it with a mixture of chili powder, lime juice, and salt.
