Ingredients:
- 1 bag (14 ounces) coleslaw mix
- 1/2 red bell pepper, diced
- 1/2 orange bell pepper, diced
- 3/4 cup mayonnaise
- 1/3 cup sour cream
- 1 can (13.75 ounces) black beans, rinsed and drained
- 1 can (13.75 ounces) corn, rinsed and drained
- 1/3 cup fresh cilantro, minced
- 1/4 cup lime juice
- 1 jalapeño, seeds and ribs removed, minced
- 1 packet taco seasoning
Instructions:
- In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, and taco seasoning until combined.
- In a large bowl, combine the coleslaw mix, bell peppers, black beans, corn, cilantro, and jalapeño.
- Pour the taco dressing over the salad and toss to coat.
- Serve immediately or refrigerate for later.
