Mexican Coleslaw

 

Ingredients:

  • 1 bag (14 ounces) coleslaw mix
  • 1/2 red bell pepper, diced
  • 1/2 orange bell pepper, diced
  • 3/4 cup mayonnaise
  • 1/3 cup sour cream
  • 1 can (13.75 ounces) black beans, rinsed and drained
  • 1 can (13.75 ounces) corn, rinsed and drained
  • 1/3 cup fresh cilantro, minced
  • 1/4 cup lime juice
  • 1 jalapeño, seeds and ribs removed, minced
  • 1 packet taco seasoning

Instructions:

  1. In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, and taco seasoning until combined.
  2. In a large bowl, combine the coleslaw mix, bell peppers, black beans, corn, cilantro, and jalapeño.
  3. Pour the taco dressing over the salad and toss to coat.
  4. Serve immediately or refrigerate for later.
