Waffles with blueberry compote

 

Ingredients:

  • 100g blueberries
  • 1 teaspoon honey
  • 3 tablespoons water
  • 2 waffles (toasted)
  • 2 tablespoons quark (fat-free, plain)

Instructions:

  1. In a small saucepan, combine the blueberries, honey, and water. Bring to a simmer over medium heat, then cook for 8-10 minutes, or until the blueberries are tender and have just started to burst.
  2. While the compote is cooking, toast the waffles according to package directions.
  3. Serve the waffles with the blueberry compote and quark.
