Peach Crumb Muffins

 

Ingredients:

Streusel Topping:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon (or more to taste)
  • 6.5 tablespoons unsalted butter, melted

Peach Muffins:

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs (or 3 small)
  • 1 cup granulated sugar
  • 1 cup Greek yogurt
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 and 1/3 cups peeled, chopped peaches, divided (1 and 1/3 cups for the batter and 1 cup for the topping)
  • 1-2 tablespoons flour

Glaze:

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C) and line a cupcake pan with paper liners.
  2. To make the streusel topping, whisk together the flour, sugar, brown sugar, and cinnamon in a small bowl. Add the melted butter and stir with a fork until crumbly. Refrigerate until ready to use.
  3. To make the muffins, in a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a medium bowl, whisk together the sugar and eggs until combined. Whisk in the yogurt, oil, and vanilla extract until the mixture is pale and yellow.
  5. Fold the wet ingredients into the dry ingredients until just combined.
  6. Reserve 1 cup of peaches for the topping. To the remaining peaches in the bowl, add 1 tablespoon of flour and toss until all of the peaches are coated with a thin layer of flour. Gently fold the peaches into the batter.
  7. Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full. Gently tap the pan on the counter to remove any air bubbles.
  8. Top the muffins with the reserved peaches and then sprinkle the streusel topping over the top of each muffin.
  9. Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before removing them to a wire rack to cool completely.
  11. To make the glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze over the cooled muffins.
