Ingredients:
Streusel Topping:
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon (or more to taste)
- 6.5 tablespoons unsalted butter, melted
Peach Muffins:
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs (or 3 small)
- 1 cup granulated sugar
- 1 cup Greek yogurt
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 and 1/3 cups peeled, chopped peaches, divided (1 and 1/3 cups for the batter and 1 cup for the topping)
- 1-2 tablespoons flour
Glaze:
- 1 cup powdered sugar
- 1-2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions:
- Preheat oven to 400 degrees F (200 degrees C) and line a cupcake pan with paper liners.
- To make the streusel topping, whisk together the flour, sugar, brown sugar, and cinnamon in a small bowl. Add the melted butter and stir with a fork until crumbly. Refrigerate until ready to use.
- To make the muffins, in a large bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a medium bowl, whisk together the sugar and eggs until combined. Whisk in the yogurt, oil, and vanilla extract until the mixture is pale and yellow.
- Fold the wet ingredients into the dry ingredients until just combined.
- Reserve 1 cup of peaches for the topping. To the remaining peaches in the bowl, add 1 tablespoon of flour and toss until all of the peaches are coated with a thin layer of flour. Gently fold the peaches into the batter.
- Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full. Gently tap the pan on the counter to remove any air bubbles.
- Top the muffins with the reserved peaches and then sprinkle the streusel topping over the top of each muffin.
- Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before removing them to a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze over the cooled muffins.
