30-Minute Cilantro-Lime Honey Chicken Bowls with Peach Salsa and Rice



Ingredients:

 Peach Salsa:

  • 3 medium yellow peaches, pitted and diced
  • 1 sweet red bell pepper, diced
  • ¼ cup red onion, diced
  • 3 green onions, finely chopped
  • ½ bunch cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice, or more to taste
  • ¼ teaspoon chili powder, or more to taste
  • ¼ teaspoon salt, or more to taste

Cilantro-Lime Honey Chicken:

  • 1 lb chicken breasts, skinless, boneless, sliced
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ¼ teaspoon salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice (juice from ½ lime)
  • 2 tablespoons honey
  • 1 tablespoon butter
  • Chopped fresh cilantro, for garnish
  • Lime slices, for garnish

Rice:

  • 2 cups cooked jasmine rice

Instructions:

Peach Salsa:

  1. In a large mixing bowl, combine diced peaches, red bell pepper, red onion, green onions, and chopped cilantro.
  2. Add freshly squeezed lime juice, chili powder, and salt. Toss to combine well.
  3. Taste and adjust seasoning as needed with more salt, pepper, lime juice, or chili powder. Set aside.

Cilantro-Lime Honey Chicken:

  1. Season the sliced chicken breasts with smoked paprika, chili powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken slices in a single layer.
  3. Cook undisturbed for about 4 minutes to sear the chicken. Flip the chicken slices over and cook for an additional 2 minutes.
  4. Reduce heat to low. Add freshly squeezed lime juice and honey to the skillet. Stir and cook for another 2 minutes, stirring frequently, until the chicken is fully cooked through.
  5. Remove from heat. Add butter to the skillet and stir off heat until the chicken is evenly coated. Mix in chopped fresh cilantro.

Assembly:

  1. Divide cooked jasmine rice into serving bowls.
  2. Spoon the peach salsa and cilantro-lime honey chicken over the rice.
  3. Garnish with chopped fresh cilantro and lime slices.

Notes:

  • This dish pairs well with plain jasmine rice, flavored rice like cilantro-lime rice, or even pasta.
  • For a low-carb option, consider serving with cauliflower rice or roasted cauliflower.
  • Ensure the chicken is fully cooked through and the flavors are well balanced before serving. Adjust seasoning according to personal preference.
