Low Carb Chicken Broccoli Salad

 

Ingredients:

  • 4 cups chopped broccoli
  • 1/3 cup chopped red onion
  • 12 ounces canned chicken, drained
  • 7 strips bacon, cooked and crumbled
  • 1/3 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1/2 tsp garlic salt
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Prepare Salad:

    • In a large bowl, combine chopped broccoli, red onion, and drained canned chicken.
  2. Make Dressing:

    • In a separate bowl, whisk together mayonnaise, Greek yogurt, and garlic salt until well combined.
  3. Combine Ingredients:

    • Pour the dressing over the broccoli, onion, and chicken mixture. Mix well to coat everything evenly.
  4. Add Bacon and Lemon Juice:

    • Stir in 5 crumbled strips of bacon.
    • Add lemon juice to the salad mixture and toss gently.
  5. Season to Taste:

    • Season with additional salt and pepper to taste, if desired.
  6. Serve:

    • When ready to serve, garnish the salad with the remaining bacon crumbles on top.
