Baked Ham and Cheese with Bechamel Sauce

Ingredients:

- 6 slices of Cobblestone Bread Co. Million Dollar White Bread

- 12 slices of smoked gruyere cheese (sliced with a mandolin)

- 3 large slices of ham

- 3 tablespoons Dijon Mustard

- 2 tablespoons butter, plus extra for brushing onto bread

- 2 tablespoons flour

- 1 ½ cups milk

- Salt and pepper

- ½ cup Grated Parmesan cheese


Instructions:

1. Preheat the oven to 400°F.

2. Lay the slices of bread on a baking sheet (line with foil for easy cleanup).

3. Brush each side of the bread slices with melted butter.

4. Once the oven is preheated, toast the bread slices for about 2 minutes on each side. Watch closely to prevent burning.

5. Remove the bread from the oven and arrange three slices.

6. Top each slice with mustard, 2 slices of cheese, ham, another 2 slices of cheese, and a top slice of bread.

7. Cut each sandwich into 4 pieces and place them back on the baking sheet.

8. In a saucepan, melt 2 tablespoons of butter. Add flour and whisk until smooth and golden.

9. Slowly whisk in the milk, raising the heat slightly, and continue whisking until the sauce thickens.

10. Season with salt and pepper to taste.

11. Once thickened, remove from heat and stir in the Parmesan cheese until melted.

12. Spoon the sauce onto the tops of the mini sandwiches.

13. Place the tray in the oven for about 6 minutes. Then, turn on the broiler and broil the tops for about 4 minutes or until the cheese is hot and bubbly. Be careful not to let the bread burn.

14. Serve warm! Enjoy!
